Three Ways to Eat Sweet Potatoes

Sweet potatoes are a delicious root vegetable and have a wide range of health benefits. They’re slightly sweet and soft in texture making them very versatile. Sweet potatoes are rich in antioxidants, fiber, vitamin C, and potassium.

  • #1 Frozen Shredded Sweet Potato & Egg Frittata. This is the meal to make when you need to use up bits and pieces of produce. Whisk together 4 eggs and combine with 1 cup frozen shredded sweet potato, and 1 cup mixed minced vegetables (fresh or frozen—broccoli, onion, carrots, peas—use what you have on hand!), 2 Tbsp fresh or dry herbs and 1 Tbsp olive oil. Season with a bit of sea salt and pour into a greased oven-proof skillet. Top with shredded cheese if desired. Bake at 325 for 12-15 minutes or until the center is set. Serve hot or keep in the fridge for up to 3 days.
  • #2 Roast the entire sweet potato. Roasting a whole sweet potato is as easy as setting your oven to 400’, poking a washed sweet potato a few times with a fork then placing in the oven to bake for 40-50 minutes or until soft in the center. Enjoy like a baked potato or mash with herbs/spices. Try thyme and rosemary or cinnamon and maple syrup or garlic and cumin.
  • #3 Baked sweet potato ‘fries’. Crisp and perfectly seasoned, these ‘fries’ make an excellent addition to any meal. Slice a washed sweet potato into 1/2” wedges. Toss with a drizzle of oil, garlic powder, paprika and a bit of sea salt. Bake on a parchment lined sheet pan at 400’ for 10-15 minutes, then toss, bake for another 10 minutes or until the edges are brown and crispy.
