3 Ways to Eat Zucchini
Zucchini is an amazing vegetable. It is a rich source of vitamin C, B-vitamins, and vitamin A and also has anti-inflammatory properties, promotes healthy digestion and has a mild versatile flavor.
- #1 Sautéed Zucchini. This simple and quick cooking method makes a perfect side dish. Heat a medium skillet with a bit of olive oil, add a clove of minced garlic (or 1/2 tsp garlic powder) and 1-2 sliced zucchini. Cook until the zucchini is tender and starts to brown-about 10 minutes. Season with a bit of sea salt and red pepper flakes.
- #2 Crisp Zucchini Fritters. Zucchini fritters are crispy, flavorful, quick to make, and are perfect for meal prep because they freeze well and can be made ahead of time! Shred 2 zucchini then toss with a pinch of salt and let sit for 10 minutes. Squeeze out all the extra moisture (this is the key to crispy fritters—keep squeezing!) and then mix the zucchini with 1 egg, 1/4 cup flour, 1/2 tsp garlic (powder or freshly minced), and 2 Tbsp herbs like parsley (fresh or dried). Heat a medium skillet, add a splash of oil, then cook the fritters in 2 Tbsp portions about 3-5 minutes per side. If freezing, reheat the fritters for 10 min in a 400’ oven.
- #3 Zucchini Boosted Smoothie. Frozen zucchini adds the most amazing creamy texture when blended into smoothies. Freezing zucchini is also great way to use up zucchini that would go bad otherwise. To freeze, simply chop 1” into pieces, place in a freezer-safe container or ziplock bag and toss in the freezer. For extra nutrition and fiber, leave the peel on!
